Chimichurri Grilled Chicken with Mexican Corn & Romaine Salad

Can't say that I'm a huge follower of Drake, but this song is appropriate for this grilled chicken recipe from MarleySpoon. So much so that I was half tempted to click on their link for a 25% off my next box offer to come back to them. I think they will need to offer me more than that to put up with the massive irritation it was to never really know when my groceries were going to show up and what condition they would be in upon arrival.


According to the googles, chimichurri is the Argentinean version of pesto. Parsley, oregano, garlic, olive oil, vinegar, and red pepper flakes. My buddy Martha was kind enough to send me a personalized plastic bag of premade so I did need to look up the ingredients to share them with you. Also Martha is not my bestie, she doesn't know me at all, and I'm pretty sure she didn't make the chimichurri herself, I made it up for laughs. Act shocked. The grill time on this was good, not over not under...twas the three bears of cook times. Shockingly flavorful for a short marinating time on the chicken.


Mexican corn always makes me happy. I always thought all corn really needed was a little butta, salt, and pepper, but over the years I've changed my tune. Good corn may not need much help but holy cow Mexican style corn is simply the best. This recipe used feta but I prefer the queso fresco I get. I love feta a whole whole bunch but the queso fresco is a bit more mild in flavor and allows the corn to shine. And if you don't love lime crema, I'm sad for you. It is one of my favorite things to add to Latinx foods.


I'm going to brag a little bit here. I put the radishes in the natives salad, just like ours. I covered their salads in ranch...because they are children after all, and still expected them to complain and not eat the radishes. Joke is on me. Be damned if they didn't eat everything on their plates including those radishes I expected to be sus for them.

This meal was fast, easy, and good. That is exactly what I want out of a meal. Native2 asked for seconds on corn so I'm taking the "fixins" with me to make it while we are camping. Probably as much for me as for him, and he will probably decide he no longer likes corn anyway just to spite me.
