Louisiana-Style Shrimp and Grits
Okay I don't, but Queen Bey does and respect that because I love hot sauce on so very many things. This meal from Gobble was the last of the 3 anniversary dinner meals I ordered from Gobble. As with other recipes I've linked the recipe card to the photo. Speaking of photos, I've been trying to "edit" photos a bit more in an app. I like this little polaroid frame thingy. I'm probably having too much fun with it but y'all can deal. This was a meal I almost dreaded cooking because while Gatherer loves shrimp, the Natives do not. I'm also terribly picky about grits and their preparation. Gobble's showed up pre-cooked with instructions to microwave and I side eyed that shit real hard. Other than the pre-made grits most of this recipe was fairly easy to pull ingredients on your own. Pick a Cajun style seasoning mix you like, and my best recommendation is to get quality shrimp. If you purchase it frozen you are really going to need to get as much moisture out of the shrimp as possible if you want this to turn out well.
Shrimp takes minutes to cook, if that. I often find most recipes have an active cook time that can border on rubbery. I tend to keep the pan a little hotter than recommended, no more than a minute per side. I also eat sushi with all the raw fish, I eat my steak rare, and I love ceviches and tartars. I guess what I'm saying is take most of my cook times with anything other than chicken or pork with a grain of salt if you tend to like food more well done. When I plated the Natives I chopped the shrimp up about as small as it would go, I mixed everything up super well, and then I put it in front of them. I made them try one bite, they said it was good, and I walked away. More like I ran away. I had no desire to yell at them to eat so I figured Hunter and I could watch a show (I don't think my baseball was on) and they could watch a show and I wouldn't worry if they had consumed food or not. Hunter claims they ate very well when he brought them dessert. He could be lying for all I know but it definitely made it so we could enjoy our dinner with less stress. On to the grits. They were good. Not too thick, not too runny. I had my doubts about microwaved grits, I grew up eating Quaker instant grits on school mornings...and I don't suffer that on anyone. I was worried these would turn out the same way. I enjoyed instant grits fine enough as a kid, but I've gotten a bit more bougie in my old age. The meal kit grits were a far cry better from instant but I will say the cheddar didn't come through well and I know how to make cheddar grits as I like them so I'm not really dependent on needing a kit to make this in the future.

I'd definitely make this again. It is probably a bit more expensive than what I would pay for just a normal meal but to celebrate something it was nice (shrimp is expensive to be little bottom feeders y'all). My only personal add in would be a good smoky hot sauce, if you are like me you have 5 or more types just hanging out in the pantry (not in my bag like Beyoncé) other than that no real changes needed if you start with nice cheesy grits.
