Crispy Coconut Hawaiian Fish Tacos with Sesame Cabbage Slaw & Pineapple Salsa
See what I did there... fish tacos... hooked... oh come on you know you laughed a little. I like fish tacos quite a bit, if shrimp or fish tacos show up on the menu Imma probably order it. Just sayin. For a 15 minute meal, this was fairly labor intensive and it had quite a few ingredients. I'm happy with grilled or pan seared fish but this was a fried option, which I don't mind. Gobble did supply the egg for the batter, which was nice. Came pre-whipped in a little container. They also supplied breading bags which I thought was sorta funny. I think it was a wasted item, even if people don't have gallon storage bags, two plates would suffice (one for flour, one for the coconut panko bread crumbs).
Recipe card lists the fish selected as "fish taco strips" which is annoying, I mean how hard is it to list the type of fish on the card? I checked out the nutritional information and it appears that the fish o' choice was snapper. This was another card that I really wanted to have the step separated a bit more. I almost messed up by missing coating the fish in flour first because of how Step 2 is written. There are three "place the" bulletins one right after the other and I almost missed one of them. The slaw wasn't anything more than cabbage, sesame dressing, and lime juice and the pineapple salsa took advantage of a pre-made pico and snack containers of pineapple. Nice little short cuts but pico really is easy to make. This was a win everyone ate well.

Flavors were on point but this meal really would have been difficult to polish in 15 minutes unless you have a massive frying pan. It probably could have used slightly fewer ingredients but it was by no means bad, just very involved. I'm a fan of how well the natives have been eating slaw lately having another veggie option is really great. Definitely could have cut the calories a bit by just having a seasoned grilled or pan seared fish but that is an easy change to make if preparing on your own (and you could sub almost any fish you want as well).
