Sweet & Sticky Salmon with Roasted Veggies & Rice


I'd ask your pardon for the Weezer reference in my title but honestly I was reaching for a punny title and I really enjoyed watching the Weezer Muppet collaboration for this song. I think by the time it came out I wasn't watching music videos anymore so I hadn't seen it. It made Gatherer's day a little brighter to watch. It has been a difficult few days in the cave so brighter is definitely better.


You know what didn't make my day any brighter...this meal. Seriously. I love salmon. So do the Natives and Hunter. This meal was disappointing. The delivery was late but honestly with #MarleySpoon I expect it at this point. The pieces were all there for a good meal, it just failed when executed as written. We've had a similar meal from #HelloFresh that really did well and, in fact, actually made the Natives LOVE Brussels sprouts. The salmon had this distinctly not fresh taste. I think it would have been fine in a chowder, but thai chili sauce that served as the marinade was entirely too light to compensate for the lower quality of the protein.


The rice was rinsed and cooked by direction but it was just slightly underdone. Not enough to be considered inedible but definitely not good. On these recipes I tend to go to the high end of the cook time for most starches, veggies, and chicken/pork as the low end never seems good enough. I actually left the rice on for longer than my skynet timer (alexa is the timer in the cave but she and I really do have a love hate relationship so I call her skynet) so I think it was a water to rice ratio problem.


The veggies were...meh. Not great, not horrible. The natives at them but those red peppers were a struggle. I actually think adding the thai chili sauce to them would have improved them, but I'm biased because that's how the natives learned to love the sprouts. Basically they were tossed in soy sauce and garlic and roasted. I cheated and used sesame oil rather than olive oil so without that it might have been even more lackluster.

Rating: 2 luke warm sweet teas

Not repeating as is if I ever make this again. There are bones for a good meal so I can work with that if I ever decide to recreate. I think a better quality of salmon might have worked and definitely the skin needed to be crispy.
