Nectarine Shortcakes with Basil Syrup & Buttermilk Cream

I love Schitt's Creek. You can often find Gatherer and her brother (I was trying to find a catchy Neanderthal like name for brother and learned that Brat means brother in Russian and I had to walk all the way away from that because I laughed so hard) exchanging Creek memes, gifs, and quotes. In trying to think of a catchy title from this blog, all I could think of was the fold in the cheese episode. The shortcake biscuits and cream in this use mascarpone so it is very very fitting as I had to fold in the cheese to the buttermilk cream.


I've not minced words about not being a baker, I will also confess I am a horrible southerner because I cannot make fried chicken or biscuits. After making this shortcake biscuit I think I could make a halfway decent regular buttermilk biscuits. I wouldn't have to make any biscuits or fried chicken at all if I could get Ms. Winner's here or if Lee's would put their spicy recipe back on. And who decided to stop making pepper gravy? I'm on a tangent, sorry. I baked and was fully expecting dry and horrible, but I didn't screw it up!! Also I read somewhere to freeze your butter and use a box grater to incorporate it into shortcake/biscuit dough and it worked like a blessed charm y'all. Do it every time (I cannot show you everything...but I can show you this one thing lol). I wasn't worried about the syrup, it seemed easy and it was. My only change would be to dice the nectarines and chiffonade the basil to create more of a compote vs a syrup however it was perfectly delightful as is.


That cream...it was so so so good. I can't believe how easy it was to make. Mascarpone, water, buttermilk powder, and regular sugar (as opposed to powered sugar). I keep buttermilk powder on hand, I occasionally find myself in a recipe that calls for 1/4 cup of the devils milk (so gross) and very rarely have any in the fridge so I just use the powder and mix some up, please don't tell my granny she would for sure roll over in her grave. I plan on serving that cream with berries all the time. I want some now just thinking about it. I may or may not have had several spoonful's right out tha fridge from the left overs when I made it.

Yeah I made up a new rating, its my blog I can do what I want (said in a very childish voice). Are you ready for the catch...Native1 actively disliked this dessert. I ate his for breakfast the next day. Normally if I make something from scratch and those heathens don't like it I am irritated. Not this time...because it meant more for me. Native2 liked it and I think Hunter liked it but honestly I would make the whole batch again just for myself. For some reason the line " you just...fold it in" seems to hold deeper meaning for me, so if it speaks to you just fold it in. If it doesn't, I probably seem a little squirrely and you may not read too many more of these.
